Copycat Bacon gruyere Egg Bites

If you’ve never tried the Bacon Gruyere egg bites from Stabies…I’m so sorry. They are SO GOOD! But when I looked at the ingredients list, I didn’t love it. I’ve been really trying to focus on what I put into my body and that long list just wasn’t it.

So I set out to create a version that’s equally as tasty with a much shorter ingredient list and I’m here to share it with you!

You’ll need:

A muffin pan
5 large eggs
1 c cottage cheese
1 c shredded gruyere cheese
4 T real bacon bits
Cooking spray

Directions:

Preheat your oven to 350 F. Spray your cupcake pan with cooking spray or line with muffin cups and while the oven preheats, prep the egg bites.
Add your eggs and cottage cheese to a blender and blend. You can add a tablespoon of milk or water if the mixture is too thick and not blending well. Then, add the shredded gruyere and blend until smooth.
If you prefer a more even distribution of bacon, stir in the bacon bits now. Otherwise…
Pour the mixture into the muffin tins, dividing equally. Top with the bacon bits and lightly press them into the egg mixture so they aren’t sitting right on top. Top with extra gruyere cheese, if desired.
*At this point, I will also add an 8x8 pan with about an inch of water to the lowest rack of my oven. This helps create some steam keeping the egg bites more moist as they cook.
Bake on center rack at 350F for 20-25 minutes (or 15 minutes if you’re using a mini muffin tin)
Allow to cool for 3-5 minutes before removing. They may deflate some as they cool, this is normal.

These save well in the fridge for up to 3 days and can be reheated on the stove or microwave.
